Noma World's no 1 again - see CEO Peter Kreiner from the launch of "The Authentic Company" book



Noma is once again the World's best restaurant. Through their concept which is at the same time historic and using the terroir of the Nordic region and yet innovative, they are able of creating a unique experience and what I call an authentic identity. When I released my book Den autentiske virksomhed ("The Authentic Company") in March, Nomas CEO Peter Kreiner gave an excellent talk on the authentic identity of the restaurant. He talked about the concept and how Noma has continually been striving to focus and narrow the identity and the concept of the restaurant in order to be more and more clear on the identity and the story of the organization.

I was evry pleased to participate in a live interview on Danish TV2 News this evening during the event in London where the 50 best restaurants 2012 were named. Meet the Leaders of the Authentic Companies



On February 23rd I launched the Danish book "Den autentiske virksomhed" (The Authentic Company) in the Old Stock Exchange in Copenhagen. During the conference and the reception in the evening some 300 guests joined the event. I was especially grateful to Federico Minoli, former CEO of Ducati and Dr. Andreas Braun from BMW in Munich for travelling to Copenhagen to join the conference and deliver two very interesting talks about the turnover of Ducati and the ideas and qualities of the BMW Museum.

We've just created a video channel where we'll present videos regarding authenticity and the book "Den autentiske virksomhed". The first eight videos are available now - all from the event in the Old Stock Exchange. Most of them are in Danish but Minoli and Dr. Braun and the last video with the panel discussion are in English.

NOMA - Time and Place in Nordic Cuisine (book release)

Last month, Rene Redzepi, the celebrated No. 1 chef of restaurant NOMA, was introducing his new book at the Sydney Opera House. I just received the book by mail this morning. It's beautiful and well worth reading. Inspiring story (and diary) and inspiring photos. Out on Politikens Forlag in Denmark and Phaidon elsewhere.

DDA Bar #21 at Stagis

Yesterday afternoon and evening, Stagis hosted the 21st DDA Bar, an event for the members of Danish Design Association. Peter Kreiner, CEO of Noma gave a brief talk on the success of Noma. He also added an important comment on the window of opportunity that not only Noma and Danish restaurants have due to Nomas status as the Worlds leading restaurant. Other Danish companies, especially the creative ones, could use the possibility to travel out in the World and export more of our social and creative skills. At the end of the two talks we decided to create a new platform in Danish Design Association focusing on internationalization in the Danish design industry.

Nikolaj gave a talk on authentic organizational identity, demonstrating our concept of authenticity and explaining how we come about understanding the authentic strengths of the company in order to help them grow into authentic market positions. He used Noma, Bøgedal, Absolut and Ducati as casestudies – all part of the book that Nikolaj is working on (he says there are only the last 80 pages left to go).

After the talks our guests looked around the Stagis Museum which has been updated and we served local, nordic snacks from Manfreds (former Noma chef) and DinBaghave (“YourBackyard”), all organically grown, primarily delivered from Kiselgården, a small farm who also delivers to Noma.

August Event on Authentic Identity with Noma Case Study

On August 26 we are hosting an event for the members of Danish Design Association, primarily professional design agencies. I will give a talk on organizational authenticity and Peter Kreiner, CEO of Noma restaurant, will join us and give a brief talk on the success of Noma from a business perspective. Noma recently became the no. 1 restaurant in the World (see my blog-post) and the restaurant headed by chef René Redzepi is a case-study in my book "The Authentic Company" which I'll be spending most of the summer finishing in order to get it to the publisher very soon. I am looking forward to seeing a lot of design-people, clients, friends and others who are interested in knowing a bit more about our work on organizational authenticity and what I am writing on the Noma case-study.

Autentisk identitet er vejen til succes
Stagis har udviklet en metode til at undersøge en virksomheds autentiske identitet. Processen involverer antropologiske metoder og kortlægger autenticiteten på tre dimensioner. Nu bruger Stagis sine værktøjer til at udvikle strategi og identitet for kunderne. Nikolaj Stagis er ved at færdiggøre en ledelsesbog med titlen "Den autentiske virksomhed", som bruger LEGO, Noma, Absolut, Alessi og Ducati som eksempler. Nikolaj fortæller om arbejdet med autentisk identitet og hvilken effekt det har på de organisationer, der bruger metoden.

Noma er brudt igennem som verdens restaurant nr. 1. Med dybe rødder i det nordiske køkken og en kreativ ildsjæl i spidsen, har restauranten skabt en autentisk identitet, som er blevet en verdenskendt succes. Direktør Peter Kreiner er gæst og fortæller om strategien og giver sit bud på, hvordan det kunne lykkes for en dansk kreativ restaurant at bryde igennem.

Authentic Noma Restaurant is now the World's No. 1

Today, restaurant Noma was announced the World's number one restaurant. Tonight chef René Redzepi is being celebrated in London. Last year I was interviewing René a couple of times for the book I am working on. He has rediscovered Scandinavian food culture and reinvented what it is. And when I say invented I do mean it. It's a creative and innovative place that dares to stand by it's beliefs and tries to challenge the tastes and opinions of it's guests. The first mental border they crossed was shedding light on the exotic side of home. When everyone was still looking at France, Italy, Spain, Vietnam, Japan and all the other well known gastronomic territories, Noma began to worship our own terroir.

  
Noma was number 33 in 2006, number 3 in 2008 and now 806 chefs and restaurant critics has voted René and his team number one. Spanish El Bulli has been number 1 for four years but is now number 2 and and the British restaurant The Fat Duck is number 3. René worked at El Bulli 8 or 9 years ago and now he has overtaken the status of his master Ferran Adrian, he is becoming the most well known chef as he tops the list of Restaurant Magazine. Noma comes from "Nordisk Mad" which means "Nordic Food". As part of a new movement celebrating nordic food culture, Noma was the first upscale restaurant to rediscover and redefine nordic recipes and food stuffs.
  
When the founders Claus Meyer and René Redzepi first opened doors six years ago, they were ridiculed by Danish colleagues. "You'll never get a good job in the business again," one of the chefs told René back then. "Why would you through away your career like that?". René was going against all odds and now he's being celebrated around the World. Noma is the first Danish restaurant to ever receive the title. I have had the pleasure of dining at Noma six or seven times and heard René's personal story as well as that of the restaurant. It's no wonder René is winning. Not only because he was awarded "Chef's choice" last year. Also because of his personal upbringing as a child where he was visiting Macedonia in the summer time, learning and enjoying a more simple food culture than that of Western Europe in the 80's. As a young chef he was working at the three-star Michelin restaurant El Bulli under the management of Ferran Adrian and the team of El Bulli famous for innovating and changing what's possible in a kitchen - one of the methods are known as molecular gastronomy. I'm not surprised Noma has risen to be number one. It's one of the authentic organizations that manage to use both the personal, organizational and trade heritage and combine it with new ideas and an innovative way of communicating the concept when you sit at the table. An amazing story in each and every way!
